We’re making our way through Houston’s Michelin-starred spots, and of course, no food journey is complete without some good old-fashioned Texas barbecue. Corkscrew BBQ in Spring has earned its Michelin star by doing things the old-school way—low and slow, with no shortcuts.
What started in a home kitchen, then a food trailer in The Woodlands, has grown into one of the most respected BBQ spots in the state. Now, for the past 10 years, they’ve been serving some of the best smoked meats around, drawing visitors from all over the world. The owners are there daily, making sure the food and service stay just as incredible as when they first opened in 2015. That level of dedication shows in every plate served.
Texas is known for its barbecue, but this place takes it to another level. The brisket melts in your mouth, the ribs are glazed to perfection, and every bite reminds you why people are willing to wait hours just to get a taste. We tried a little bit of everything, and you truly can’t go wrong with anything on the menu. Every cut of meat is smoked with precision, bringing that deep, rich flavor that only comes from time, patience, and experience.
If we had to choose favorites, the brisket, ribs, and potato salad stood out the most—the brisket had the perfect bark and buttery texture, the ribs had just the right balance of sweetness and smoke, and the potato salad was the perfect complement to all the smoky goodness.
One thing to know before you go: expect a wait. On weekdays, it can be up to an hour, and on Saturdays, it sometimes stretches to three. But once you take that first bite, the time will melt away like the brisket on your tongue. However, if patience isn’t your thing, they do offer online ordering so you can skip the line and get straight to eating.
If you’re serious about BBQ, this is one place you’ll want to experience for yourself. Between the unmatched quality, the friendly staff, and the dedication to doing things the right way, Corkscrew BBQ has earned its reputation as a Texas institution. If you haven’t made the trip yet, consider this your sign!
